Simon's usual attention and passion for the landscape and the essence of a given place is directed instead at the beverages which have in part become part of the places themselves. Blue Hawaiian is a popular tropical drink. The following is a common Blue Hawaiian recipe:

1 oz light rum

2 oz pineapple juice

1 oz Blue Curacao liqueur

1 oz cream of coconut

1 slice pineapple

1 cherry

In an electric blender, mix the light rum, pineapple juice, blue curacao, and cream of coconut with one cup ice at high speed. Pour contents into a tropical glass. Decorate with the slice of pineapple and a cherry.
